With all the data you can collect from the forum posts there must be a million things you could do.  Check it out:

• Stats for the person with most posts in a given period
• A user rating system for people to rate the helpfulness of a specific post
• A tracking system to determine who has the greatest contribution to a thread becoming a hot topic
• Have contests for people who hit certain levels in the above categories and send them, say, a coupon for $5 off anything on the breakfast menu at Waffle House

I had a lot more ideas earlier at work, but I am not there now and left everything where it was.
